The 2021 Sextant SLH Pinot Noir is a dark and robust rendition of this typically light varietal. Sticking to its roots with classic aromas of red cherry and strawberry, and adding notes of fresh wild mushrooms and wet forest floor, it is the perfect balance of fruit and earth. The palate is highlighted by bright acidity, typical of classic pinot noir. Vibrant fruits across the palate and through the finish showcase notes of plum and raspberries with hints of clove spice.   Our Santa Lucia Highlands Pinot Noir is sourced from the highly acclaimed Santa Lucia Highlands region of Monterey County. A three day cold soak on the skins helps extract color and flavor before being fermented in an open top tank that is pumped over three times a day until the first fermentation has completed. We utilize a full secondary fermentation before putting it into the bottle.
