Tobalá is the most coveted in all agave. It is a small, difficult to cultivate agave, and has very distinct flavor characteristics. Sacacuento Tobala is made semi-wild Tobala. The ranch that produces Sacacuento, Rancho Buenaventura, has been growing maguey Tobala in a semi-wild environment for many years. Though this agave is relatively plentiful at the ranch, it’s small size and yield make its production a balancing act between demand and sustainable supply.
