To make Convite Mezcal Esential, agave is nutured and then hand harvested before being cooked in a stone oven lit by oak firewood. This cooked agave is fermented with spring water sourced from the Zapotec mountains and distilled in a copper still in small batches to ensure supreme flavor. Aromas of citrus zest and a hint of smoke lead you into a palate of cooked agave, bell pepper, and slight brine.
