Product Overview
Don Papa Rum is named after the late Papa Isio, a leader and freedom fighter who believed in the Philippines' independence from Spanish rule. The rum is distilled from sugarcane grown in his home island of Negros and aged for 10 years in the foothills of Mount Kanlaon using re-charred barrels of American oak. It's bottled at a higher proof of 43% ABV, and is a limited production run.
Notably sweet aromas - vanilla, molasses, butter cream, cake batter and orange peel - burst from the glass, but on the palate, this rum is dryer than expected, and there's enough fruity acids to balance the intense sweetness. It gets a little spicy- mostly clove - as it lingers and then finishes with a little peppery bite.
