Leyenda San Luis Potosi is made with agave Salmiana, which is one of the few agaves tough enough to grow in the rocky and arid lands of the central Potosino plateau.
The herbaceous nose with aromas of bell pepper and jalapeños is followed by a slightly sweet palate with strong mineral notes and gentle smokiness. The finish is slightly hot, with sweet fruity notes.
This wild agave, commonly known as verde, is endemic to the San Luis Potosi central plateau and has one of the most unique flavor profiles of any agave. This large agave takes between 7 and 10 years to reach maturity, and on average it takes about 16–19kg of agave to produce 1 liter of mezcal.
The agave for this mezcal are cooked for 48 hours in a traditional clay oven, and then milled and fermented with naturally occurring airborne yeasts in ground level cement tanks for five days. The spirit is double distilled in a traditional onion head copper still. The unaged mezcal is then bottled at 45.1% ABV.
