Mezcal de Leyendas Maguey Tobala Oaxaca is crafted by producer Aaron Robles who learned the trade from his father in law. Upon returning to Mexico, he took up making the mezcal that the region is famous for.
It's bright on the nose with medicinal notes, menthol, and eucalyptus aromas. The complex palate has pine, a touch of brine, and roasted agave. The finish is long with lingering notes.
The tobala agaves are grown sustainably and distilled on a mountainside, the distillery only reachable via a 3-hour horse ride from the nearest village. The piñas are roasted in lava-rock covered stone pits and ferment for 5 days in oak vats. Then they are double-distilled in a copper-pot still
