An unusual and delicious sipping Mezcal from Del Maguey. This spirit is named "Pechuga", which means chicken breast - a reference to the third distillation, in which a basket of fruit and a chicken breast is suspended in the still.
Hand-crafted in the village of Santa Catarina Minas from a palenque with a long view of the flat, open, treelined valley.Pechuga has a nose of basil, lemon, ocean, and fruit. It is almost scotch-like in its smoky taste. And yes, in addition it is salty, very soft, and tastes a wee bit like chicken. The Pechuga production season is limited to year end due to the special ingredients: Wild mountain apples and plums that must be in season and cannot be substituted. Naturally fermented and distilled three times in ancestral clay stills with bamboo tubing. A celebratory mezcal in which wild mountain apples, plums, red plantains, pineapples, Pechuga has a nose of basil, lemon, ocean, and fruit. It is almost scotch-like in its smoky taste.
